The American Association of Cancer Research studied 36 people with pre-cancerous lesions of the esophagus. They ate freeze-dried strawberries every day for six months and 29 of them had a decrease in the severity of pre-cancerous lesions.
Researchers point out the freeze-drying is crucial because removing water from the strawberries concentrates their cancer-fighting properties almost tenfold.
