Smoked salmon tart

Characters Bar & Grill Smoked Salmon Tart
Serves 4

Ingredients:

  • 12 oz smoked salmon
  • (4) 4" puff pastry discs, weighted and baked
  • 4 red radishes, thinly sliced
  • 4 sprigs dill, coarsely chopped
  • 2 small Yukon Gold Potatoes, steamed and diced ½-inch
  • 1 bunch each watercress and frissee, cleaned and dried
  • 2 ounces Citrus Vinaigrette (see below)
  • 2 ounces Lemon-Horseradish sour cream (see below)
To assemble:
Place puff pastry disc in the middle of each plate. Combine salmon, greens, dill potatoes and radishes and toss gently with vinaigrette, and mound on top of pastry disc. Drizzle horseradish cream across the top and serve immediately.

Citrus Vinaigrette: Combine 3 T orange juice, 2 T lemon juice and 2 T white balsamic vinegar, and whisk in a half cup olive oil. Season with salt and pepper to taste.

Lemon-Horseradish Sour Cream: Combine one-third cup sour cream with 1 t. horseradish and 2½ t. fresh lemon juice and season with salt to taste.

The Napa Valley Marriott Hotel and Spa announces the first annual, "Brian's Back-to-School Barbeque", a fund-raising celebration of food, beverage and community hosted by the all-new Characters Barbeque and featuring local Napa celebrity Chefs, wineries, breweries, live music and more.

All net proceeds of the event will go to support the Napa Valley Unified School District SC-21 Program, providing students with student-centered, 21st century learning opportunities. All funds raised will be matched through a generous challenge grant from the Napa Valley Vintners. A silent action will be a feature of the event.

Participating guests include Chefs Greg Cole of Cole's Chop House and Celadon, Toni Chiappetta of Sweetie Pies Bakery and Michael Gyetvan of Azzurro Pizzeria e Enoteca and the soon-to-open Norman Rose Tavern, all from Downtown Napa; The Hess Collection Winery, Peju Winery and Beaulieu Vineyards ; and pouring their delicious local micro brews will be Napa's Downtown Joes Brewery and Restaurant. In addition there will be live music from local Napa artists.

Brian's Back-to-School Barbeque is an event designed for the entire family. In addition to great wines and beer to compliment the great foods, there will also be a large supply of Characters signature Honey-Lemonade as well as a full line of non-alcoholic beverages, plus activities for the kids.

"This is going to be a glorious Autumn day celebration, with our great Characters Barbeque complimented by flavors created by the best Downtown Chefs and made all the tastier with the diverse beverages available to food lovers of all ages", says Brian Whitmer, event organizer and Executive Chef of the hotel. "I envision this to be the first of many local Napa gatherings we will host at our beautiful hotel".

Brian's Back-to-School Barbeque is Sunday, October 11th, from 1-4, and will be held in the Napa Valley Marriott's outdoor courtyard. Admission is $20 for adults and $10 for children under the age of 12. To make reservations please call 707-253-8600
