You've been hearing all this buzz about "super-grains," like amaranth, quinoa and spelt…Not only do they sound weird, but, they taste a little weird--especially to most kids. We've created an awesome reci-pea using our favorite super-grain, quinoa and this is sure to appeal to any age group! Serve Superpower Pudding with Nanna's Banana Puffets for a protein-packed breakfast or snack!
What's so amazing about quinoa anyway? Quinoa (pronounced 'kee-nwa') is a complete protein, meaning it has all the nine essential amino acids that you can usually get in your diet only by eating meats or combination foods like beans and rice, or whole wheat bread and peanut butter. Since quinoa is a complete protein it is a wonderful addition to any vegan or vegetarian diet, and as an added bonus, it is wheat free! Quinoa has a great earthy flavor and a fun crunchy texture.
- 1 cup quinoa
- 2 cups water
- 1 cup vanilla soymilk
- 3 Tbl sugar
- 1/8 tsp cinnamon
- Pinch nutmeg
- 1/4 cup raisins (optional)
To prepare quinoa, first rinse quinoa thoroughly. In a small saucepan, add quinoa and water. Bring to a boil, then cover and simmer until quinoa has absorbed all the water and becomes translucent this takes about 15-20 minutes. (Optional: for plumper softer raisins, add them in when quinoa begins to simmer OR for firmer raisins, add them in at the end.)
While quinoa is simmering, in a saucepan combined: soymilk, cinnamon, sugar, and nutmeg. Bring this mixture to a boil for about 3 minutes. Now add the soymilk mixture to the quinoa and mix until combined. Serve the quinoa pudding at breakfast time or for a snack with a Nanna's Banana Puffet!
