Recipe: Spruce's Pastrami and Gouda Panini

  • 4 slices, lightly toasted, freshly baked German Rye bread (Firebrand Bakery, exclusively for Spruce)
  • 2 ounces European-style Gouda cheese
  • 1/4 pound Eastern European delicatessen-style pastrami (at Spruce, we cure our own beef brisket)
  • 2 ounces vinegar based coleslaw
  • 2 tablespoons Russian dressing (see recipe below)

    Spruce's Russian Dressing

  • 3 egg yolks
  • 2 cups extra virgin olive oil (EVOO)
  • 1/3 cup water
  • 3 garlic cloves, finely minced
  • 1 tablespoon lemon juice
  • 2 tablespoons finely ground horseradish
  • 2 teaspoons Worcestershire sauce
  • Kosher salt and ground black pepper to taste

    Place egg yolks in mixing bowl and slowly whisk in EVOO to form a thick mayonnaise. Whisk water into bowl and fold in all other ingredients. Let stand in refrigerator overnight, covered, to combine flavors. The dressing will keep in the refrigerator with a tight-fitting lid for 4 days. (Recipe yields 2 cups.)

    Panini Preparation
    Lay two slices of bread flat. Cover with cheese, making sure to distribute equally between both slices of bread. Layer meat on top of cheese. Lightly dress bread slices with coleslaw, and then slather with Russian Dressing. Lightly oil a cast-iron skillet and turn heat to medium-high. Press slices together, press down with spatula to crisp on one side. Turn sandwich onto other side and repeat. Garnish with cornichons and serve. (Recipe yields 2 sandwiches.)
