Coconut Fried Prawns with Chipotle Cream
For the Cream
1/8 cup Chipotle in Adobo Sauce
1/8 cup Cilantro, minced
1/3 cup Mayo
2/3 cup Sour Cream
to taste Salt & Pepper
1. Place the Chipotle & cilantro in a mini food processor & puree. Add in the mayo & sour cream. Pulse until well incorporated. Season with salt & pepper.
For the Prawns
30 each Large Prawns, peeled & deviened, tail on
5 oz All Purpose Flour
3-4 each Eggs, beaten
1 cup Panko Bread Crumbs
1 cup Grated Coconut Flakes, unsweetened
Vegetable oil for frying
2. Mix together the panko & coconut. Season the prawns with salt & pepper. One at a time, dust with flour, dip into the eggs & then roll in the panko mixture.
3. Heat the vegetable oil in a wok to 375?. Deep fry the prawns 3 or 4 at a time until golden brown (about 1-2 minutes). Remove to a sheet tray lined with paper towels.

Chefs from the heart of Berkeley's "Gourmet Ghetto" will provide expert cooking demonstrations at the Culinary Stage from 10 a.m. until 6 p.m. Demonstrations will be given by some of East Bay's most sought after chefs, including Todd Kniess of Bistro Liaison, Chef Rodrigo de Silva of Corso Trattoria, Chef Brandon Dubea of Angeline's Louisiana Kitchen, Chef Patty Lawrence of Café Gratitude, and Chef Tanya Holland of Brown Sugar Kitchen.
The Culinary Stage will be located in the Elephant Pharmacy parking lot on North Shattuck Ave. at Cedar St.
