Laughing Bird Caribbean Shrimp and Fresh Citrus Salad Serves 4

  • ½ lb Laughing Bird Fresh Caribbean White Shrimp
  • 2 Tbsp olive oil
For the dressing
  • 1 Meyer lemon
  • 1 lime
  • 1 orange
  • 1 Tbsp honey
  • ¼ cup olive oil
For the salad
  • 2 cups of organic greens or 1 pouch of mâche salad
  • 1 clementine
  • 1 blood oranges
  • 1 navel orange
  • 1 avocado
  • 2 sprigs of mint (optional)
  • salt and pepper to taste
  1. Start by preparing the dressing. Squeeze the juice form the orange, lime and lemon. Stir in the honey to balance out the acidity and then add the olive oil.

  2. Prepare the salad by washing and spinning the greens. Slice the oranges and the Clementine into pretty segments or slices. Peel and slice the avocado.

  3. Toss the greens with ½ of the dressing and place on either individual plates or a large serving platter. Arrange the slices of citrus, avocado and mint on the salad greens.

  4. Heat a skillet on medium high heat with the 2 TBSP of olive oil. Season the shrimp with salt and pepper, then quickly sautée them until they just turn pink. Be careful to not overcook them. These are fresh healthy shrimp and don't need to be cooked longer than 1 minute in a hot skillet!

  5. Sprinkle the shrimp evenly over the salad and enjoy.
