Recipe: Slow-baked salmon

Slow Baked Salmon with Cilantro Pebre


  • 2 salmon filets/skin on
  • 1 bunch of cilantro
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 1 large lemon, for fresh lemon juice
  • ½ tbsp kosher salt
  • ½ tsp black pepper
  • 4 tbsp water - cold
Preparation Instructions:
  1. Preheat oven to 350 degrees

  2. Pull the salmon out of the fridge 1/2 hour before cooking. This lets the salmon "temper", which will help it cook more evenly.

  3. Lay salmon on a shallow baking pan.

  4. Pebre sauce- Wash cliantro throughly, shake dry. Cut off stems and discard the stems.

  5. Place cilantro in blender, add the garlic, 2 tbsp. olive oil and 1/2 tsp. salt, 1/2 tsp pepper the water and the juice of 1 lemon. Blend until smooth.

  6. Pour over the fish and bake until the fish is cookied through - about 20-25 minutes.

  • 2 lbs. red bliss potatoes
  • 4 garlic
  • 4 tbsp olive oil
  • 2 tsp dried oregano
  • 1 tsp merquen
  • 1 tsp kosher salt
Preparation Instructions:
  1. Cut potatoes in quarters, place in bowl.

  2. Grind the garlic, salt, oregano and merquen in a morter and pestel until smooth

  3. Drizzle the olive oil over the potatoes, add the paste, mix well, pour onto a parchment covered baking pan, and sprinkle with 1 tsp more merquen.

  4. Bake at 375 for 35 minutes - or until the potatoes are cooked through.
