The perfect two-bite Reuben sandwich

Reuben Sandwich
Makes 6 Sandwiches

Sandwich ingredients:

  • 9 oz. Pre-Cooked Corned Beef (see instructions below)
  • 6 Slices of Swiss cheese
  • 12 Slices Cocktail Rye Bread
  • Sauerkraut
  • Thousand Island Dressing
  • 1 Tbsp. Butter
Method:
  1. Butter one side of the rye bread, and place the slices buttered-side down on flat surface.

  2. Top each with a slice of Swiss cheese, and then divide half of the corned beef among them.

  3. Divide the sauerkraut among the sandwiches, and top each with one tablespoon of Thousand Island dressing.

  4. Top with the remaining bread slices; butter the side facing out.

  5. Preheat a griddle or frying pan to medium heat. Cook the sandwiches on each side until the bread is golden brown.

  6. Cut the sandwiches in half before serving. Enjoy!

Cooking Corned Beef
  1. Set the brisket in a large heavy pot with a lid.

  2. Cover the brisket with water.

  3. Cover the pot and bring it to a boil.

  4. Then reduce the heat to simmer and let simmer about 4 hours.

  5. By then it should be really tender. The meat will have also shrunk by about a third.

  6. When cutting the brisket be sure to slice the meat across the grain!

Sauerkraut:
  1. 6 Tbsp. Sauerkraut
  2. 2 Tbsp. Diced Shallots
  3. 1 Tbsp. Caraway Seeds
  4. 1Tbsp. Butter
Method:
  1. Sautee the shallots in the butter, then add caraway seeds and sauerkraut.

  2. Cook for 10 minutes.

  3. Let it cool down.
Thousand Island Dressing:
  • 2 Tbsp. of Mayonnaise
  • 1 Tbsp. ketchup
  • 1 Tbsp. diced pickles
  • Freshly ground black pepper
  • Salt
Method:
  1. Combine all the ingredients.

Mini Beef Sliders
Makes 6 orders

Ingredients:
  • 14 oz. Good Grade Ground Beef
  • 6 thin slices Red Onion
  • 6 slices of Tomato
  • 6pc Butter Lettuce Leaves
  • 6 slices American cheese
  • 6 2inch Buns
  • Salt and Pepper
Sauce

Ingredients:
  • 2 Tbsp. mayonnaise
  • 1 Tbsp. ketchup
  • 1 Tbsp. diced pickles
Method:
  1. Cut beef into round 2oz. patties. Season and grill them from each side for about 1 to 2 minutes.

  2. In the last minute of grilling you put the cheese on top so it melts a little.

  3. When ready to serve, place a piece of beef between each bun top with butter lettuce leaves, tomatoes, onions and sauce.

  4. You can make the sauce beforehand just combine all ingredients together.
  5. Enjoy!
