Recipe: Chang Shou Maine lobster with Fresh Ginger and Noodles
Serves 2-3 people
Ingredients:
2 to 3 lbs. whole live Maine lobster cut into 1 oz. pieces
12 oz. udon noodle
2 oz. cleaned ginger roots and cut into inch thin slices
4 oz. green onion cleaned and sliced into 1 inch pieces
8 oz. Chinese chicken stock
2 oz. of corn starch with 3 oz. of water mix to thicken sauce
2 oz. of corn starch for coating lobster
oil as needed
Cooking directions:
1) Heat up one oz. of oil in wok and stir fry noodle until hot. Place onto serving plate
2) Coat lobster pieces with 2 oz. of corn starch
3) Deep fry lobster in 350 degree hot oil for about 2 minutes and remove from fryer
4) Heat up 2 oz. of oil in wok. Add ginger and green onion and toss for 30 seconds, then add the fried lobster pieces
5) Continue to stir fry lobster for 1 minute and add 8 oz. of chicken stock and oyster sauce. Bring to a boil
6) Add corn starch and water mix to thicken the sauce
7) Place the lobster and sauce over the heated noodles
