Recipe: Mommy's Silver Dollar Pancakes
Serves 4 to 6
Ingredients:
- 1 cup sour cream
- 1 cup cottage cheese
- 3/4 cup flour
- 1 1/2 teaspoons honey
- 2 teaspoons pure vanilla extract
- 4 large eggs separated
- unsalted butter for greasing the griddle
- Combine sour cream, cottage cheese, flour, honey, vanilla extract, and egg yolks in a mixing bowl. Beat thoroughly.
- Beat egg whites until stiff and fold them in.
- Lightly butter a griddle. Ladle about 3 tablespoons of the batter for each silver dollar pancake. Cook until the bottom side is nicely browned. Turn pancake over and cook on the other side until browned.
- Serve immediately with warmed maple syrup.
- Continue ladling the batter and cooking the pancakes until all the batter is used up. Stir the batter from the bottom as the bottom is used to maintain the consistency.
- If desired, add fruit to the batter -- blueberries, strawberries, raspberries, banana slices or a combination of fruit.
